Italian Chicken Balsamic

This classic Italian Chicken Balsamic recipe is beyond simple, delicious, and easily changed to suit your family’s personal tastes or the flavors of the season. I have served this successfully with everything from an arugula salad, with roasted vegetables, and even just my favorite pasta!

Italian Chicken Balsamic

Italian Chicken Balsamic

Serves 4

Ingredients:

2 tablespoons Raimondo Winery Tuscan Herb Olive Oil
1 red onion, diced or sliced
4 cloves of garlic, chopped
4 boneless, skinless chicken breasts
1 28 ounce can diced tomatoes
1 tablespoon of fresh basil
1 tablespoon of fresh oregano
1/2 teaspoon salt
1/2 teaspoon of fresh ground black pepper
1/4 cup of Raimondo Winery 18 Year Traditional Balsamic Vinegar
1/4 cup of fresh flat leaf Italian parsley

Directions:

Saute onion and garlic in oil for five minutes in a large skillet. Remove and set aside. Fry chicken breasts until browned on both sides. Add garlic and onions back into pan. Add tomatoes. Sprinkle with basil, oregano, salt and pepper. Pour balsamic over chicken. Cover and cook for about 20 minutes.

Plate chicken and top with tomato and onion mixture. Sprinkle with fresh parsley.
