Spiced Lamb Sliders with Caramelized Onions

Makes 24-36 sliders

Ingredients: 

2 pounds ground lamb
2 garlic cloves, crushed
1 medium red onion, finely chopped
1 teaspoon coriander seeds, crushed
1 teaspoon cumin
1/4 teaspoon cinnamon
Salt and pepper to taste
Slider buns
2 medium red onions, sliced
2 tablespoons brown sugar
4 tablespoons Raimondo Winery Arbequina Olive Oil
1 teaspoon Raimondo Winery 18 year Traditional Balsamic Vinegar

Directions: 

Place lamb in a large mixing bowl and add garlic, minced onion, coriander, cumin, and cinnamon. Season to taste with salt and pepper. Mix lightly with hands until combined. Create slider sized patties. Allow to rest in the refrigerator for at least 30 minutes on a covered tray.

Using stove top griddle (or skillet), cook for 5-8 minutes per side.

Heat oil in a large pan over low heat. Add the onions and a cook pinch of salt and cook gently for 15-20 minutes, stirring occasionally to prevent sticking. When onions have softened and turned golden. Add sugar and vinegar. Continue to cook onions over low heat for 5-10 minutes, stirring occasionally until sticky and caramelized.

Serve warm sliders topped with caramelized onions. Top with your choice of toppings.
