Pasta with Red Wine

Easy, healthy, delicious, and satisfying, there is no doubt that you’ll find many ways to enjoy this pasta with red wine recipe. Any number of your family’s  favorite cheeses, greens, meats, or olive oils can be utilized to alter this Italian classic.

Pasta with Red Wine

Serves 6-8

Ingredients:

3/4 cup Romano cheese, grated
1 1/2 spinach, broccoli rabe, or greens of your choice
6 garlic cloves, minced
Seasonello salt and pepper to taste
1/2 medium onion, minced
1/4 pound Italian sausage
4 cups Raimondo Winery Passione Red wine
1/4 pound mushrooms, chopped
1/2 cup Raimondo Winery Garlic Olive Oil
1 pound pasta, cook’s choice

Directions:

Blanch greens until tender. In a small skillet, cook sausage. Drain well and crumble. Set aside. In another skillet, add olive oil, onion, and garlic, and cook until soft but not browned. Add salt, pepper, mushrooms, greens, and sausage mixture. Keep on simmer until pasta is ready.

Cook pasta for 5 minutes and drain well.

In a large skillet, gently boil wine. Cook drained pasta in wine until al dente. Stir occasionally.

Place pasta in bowls. Cover with greens and sausage mixture. Sprinkle with cheese.
